Millionaire’s Shortbread
Ingredients – Shortbread
Ingredients – Caramel Filling and Chocolate Topping
160g Plain Flour
60g Butter
60g Sugar
25g Golden Syrup
105g Butter
20g Dark Brown Sugar
½ Tin of Condensed Milk
100g Chocolate
Instructions - Shortbread
1. Melt the butter slightly then add the flour and sugar.
2. Mix until a soft dough, if too sticky then add a little flour.
3. Press firmly into a lined 20cm X 20cm square baking tray. Prick the base with a fork, try to keep it as even and flat as possible.
4. Bake for 25 mins at 180c until golden, rotate half-way.
Instructions – Caramel Filling and Chocolate Topping
1. Melt the butter, golden syrup and dark brown sugar on a low/medium heat.
2. Add the condensed milk and stir continuously.
3. Stir until it thickens slightly then pour over the shortbread and leave to cool in the fridge for an hour.
4. Melt the chocolate and pour over the cold caramel and leave to set.
